my mom uses a shot of sherry or brandy in all cake recipies and it tastes great – we don’t have orange extract but we use vanilla instead -

Gosh! that looks succulent! Moroccan gastronomy is one of the best in the world..I really like it. There’s also a cake basically made with strong coffee, black chocolate and cinnamom, you may add to it either chopped almonds or walnuts, cuz they just sort well with both chocolate and cinnamon; the coffee aroma is not strong and the cake is pretty tasty…it’s just Y.U.M.M.Y!

no, I am using unsalted walnuts, you can use also unsalted almonds if you like.

absolutely! this is the beauty of cakes, once you get the base (eggs, flour, etc.) you can add your own touch and flavor it with the essences of your choice. almond extract is great! just few drops, it’s kind of strong
