Ohh… This could happen either due to thinner batter – try with lil less water Or due to lesser all purpose flour also known as Maida – try adding lil more.
Try with one pancake first if it spreads out try adding more Maida to batter.

Its milk solid (also known as Khoa)… You can get it in Indian store.
