Sorry but FILL-IT is the proper prounciation. Check the merriam-webster dictionary online, audio section. You’re confusing the French pronunciation of the word Filet with the English word Fillet. Also, Filet Mignon is correct “Fill-ay” because it is a French phrase and because in English & American restaurants red meat may be called Filet, while Fish is called Fillet.
