Both are very good ideas. I had chosen lemon, because I wanted the color to reflect Mother's Day, spring, sunshine, etc. For Christmas, I use strawberry & lime! The addition of soda sounds great! Thanks!

This may be helpful to your watchers as well.. I recommend using a very flavorful jell-o such as tropical or cherry (especially since my other flavor was a lighter peach). Even strawberry tends to only taste sweet and not as fruity as I like. I also use strawberry soda in place of the cold water (this can be done with a lemon-lime soda with the lemon flavor). The result is a very flavorful cake. :)

It turned out stunning inside and out, and so delicious it was referred to as "magical"! I mixed up the pudding with milk before folding it into the cool whip- I highly recommend this as the topping becomes thick and grainy if just mixing the pudding straight into the cool whip.. I learned this the hard way. :) Haha.. I only wish I could've taken a photo before we devoured it..

Your cakes sound absolutely yummy! I like adding the fruit, and also using vanilla pudding! I'm going to try your versions. I bet they look beautiful with the fruit inside, and also the pudding must give a different look. Terrific ideas! Thanks!!!

You inspired me to make not one.. but TWO poke cakes today! :) One layer of peach with fresh peach pieces baked in and the other a tropical flavor! The other will be a dark cherry with a vanilla pudding and coolwhip topping.. MMMM.. I love your lemon slices on top so much that I will be decorating the peach/tropical one with peach slices! Brilliant. :)

Beautiful cake, I love the lemon slices on top! A couple tips that may be helpful.. when poking the cake, don't poke clear through to the bottom.. more will absorb into the cake and less will get stuck to the bottom. Also, to remove the cakes from the pans, submerge the bottom of the pans into hot water, this will melt and loosen the jello. YUM! :) thanks for posting
