ye and it gives a deeper flavour but what i’m saying is that whenever you roast or grill a piece of meat slowly, the meat needs the natural fat to keep the lean meat moist. you canalways take it off when it’s cooked but you should leave it on when cooking. i was watching a show on pit grilling yesterday and the guy said his favourite bit of meat was the fillet. that’s the WORST bit, no fat=no flavour. shoulder or belly til i die!
